La Vierge was founded in 2004 by Peter Clarke on the Hemel-en-Aarde Ridge, where he identified a natural amphitheatre of virgin, dryland soil suited to Pinot Noir and Chardonnay. Alien vegetation was cleared in 2004-2005, vines planted in 2005, and the winery, tasting room and restaurant complex completed in 2007, beneath the Babilonstoring mountain range — taller than Table Mountain, and a big part of the farm's dynamic weather. Clay-rich Bokkeveld shale retains moisture and cools roots while pushing deep root growth, producing wines of elegance and clarity.

Winemaker Christo Kotze favours natural fermentation across amphorae, foudres, concrete eggs and oak, maturing wines 9-12 months before blending and further bottle ageing. Ranges span the core La Vierge Estate wines and the "Story Teller Collection." The venue also hosts weddings and corporate events for up to 120 guests.
