Seven Springs was founded by English owners Tim and Vaughan Pearson, who bought 12 hectares in 2006 and planted 8.5 hectares in 2007-08; first wines followed in 2010 with winemaker Riana van der Merwe. The site sits between Shaws Mountain and the Teslaarsdal range on oceanic-influenced Bokkeveld Shale soils, producing Sauvignon Blanc, unoaked and oaked Chardonnay, Pinot Noir, Syrah and Syrah Rosé, praised by wine writers including Joanna Simon and Tim Cannavan. The estate currently runs the "Nkonzo Wildlife Art Series" Pinot Noir, a conservation-branded label supporting white rhino conservation.

7 Springs is further out than the main Hemel-en-Aarde cluster — about 20km up the R320 from Hermanus's Wine Village, toward Caledon (its postal address is Caledon, not Hermanus) — but it's on the same wine route.
